Ingredients:
For staffing-
boiled chicken cubes 1 cup
potato cubes 2 cups
salt to taste
mustard seeds 1/2 tsp
onion 1/2 cup
garlic 1 tbsp
ginger 1/2 tbsp
cumin powder 1 tsp
coriander powder 1/2 tsp
turmeric powder 1/2 tsp
chilli powder to taste
black pepper 1 tsp
garam masala 1/2 tsp
a hand full of cilantro
oil 2-3 tbsp
For dough:
plain flour 2cups
salt 1/2 tsp
sugar1/2tsp
ghee 5tbsp
baking powder 1/2 tsp
oil to fry
Notes:
* rub oil or ghee in dry flour well until every grain coated
* Do not knead the dough smooth. The dough should be rough. knead just until all combined.
* use cold water to make the dough
* you can also add peanut, carom seeds, cumin seeds, asafoetida if you like.

Hi , this is an interesting recipe ! i have not seen the use of sugar or baking power in any other samosa pastry dough recipe before. can you please explain the purpose of these and what they do? I ideally I want a crispy and bubbles on my samosa pastry. thanks
