Ingredients:
leftover jasmine rice 2-3 cup
chicken cube 1 cup
eggs 1-2
cornstarch 1tsp
light soy sauce 2 tbsp
dark soy sauce 1tsp
green onion 1/2 cup
onion 1/2 cup
carrot 1/3 cup
white pepper 1/2 tsp
sesame oil a few drops
canola oil
hot oil
Method:
- cut chicken breast in small cubes then marinade with 1tbsp of soy sauce and cornstarch for 30 mins
- heat up 2 tbsp of oil in a pan
- fry an egg. push in the side of the pan or take out
- then saute the chicken for a mins
- add carrot onion and garlic
- cook for 3-4 mins then add green onion
- add leftover rice, soy sauce, white pepper, salt and sesame oil
- fry for a mins then serve with chopped green onion and hot oil
