Here is a recipe for Coconut Rice and Chicken in one pot:
Ingredients:
- 1kg boneless, skinless chicken thighs,
- Salt 1tsp
- turmeric powder ¼ tsp
- chilli powder ½ tsp
- garlic paste 1 tbsp
- ginger paste 1 tbsp
- tomato paste 1tbsp
- pepper ½ tsp
- diced onion 1 cup
- 2 cups of uncooked white rice
- 2 bay leaves,4 cloves,3, cardamom, 1cinnamon stick, lemon peel
- 11/2 cup canned coconut milk
- 2 ½ cup water
- 1/4 cup chopped fresh cilantro
- salt in rice 1 ½ tsp
Instructions:
- marinade 1kg of boneless chicken thighs with 1 tsp of salt, ginger and garlic paste 1 tbsp of each, ½ tsp of black pepper, ¼ tsp of turmeric and 1 tbsp of tomato paste. give it a good mix and leave it for at least 20 mins.
- wash and drain 2 cups of basmati rice and let it soak up the excess water for 15-20 mins.
- Heat the oil over medium-high heat. sear the chicken pieces on both sides.
- take 2½ cups of water, into that add 1½ cups of canned coconut milk. microwave it until boiling hot before adding it to the rice. you might need more or less water than this depending on your rice type.
- remove the chicken and deglaze the pan with a little bit of water then add 1 cup of onion. cook until caramelized. add the rice and some whole cinnamon, bay leaf, cardamom, cloves, lemon peel, and a tbsp of ghee or butter.
- add the hot coconut milk to the rice, add 1½ tsp of salt bring it to a boil then place the chicken on top.
- cover the pot and cook on low heat for 15-20 mins. stir the rice gently halfway through.
- remove the whole spices and serve.
